Recipe of the Month: Fig Honey Thyme Crème Brûlée

figsTo really taste the seasons you need to be inspired by what is current in your local Farmers Market. Autumn figs, Terra Savia local organic honey and fresh thyme inspired this take on a crème Brûlée – but be advised – this is nothing like the straight ahead vanilla type – this one is complex, aromatic and has a long finish! Ingredients

  1. Quarter the figs and put them in a pot with the honey. Bring it up to a simmer and cook until the figs are soft, about 5 minutes.
  2. Add heavy cream to a pot with the thyme and bring to a boil. Let the mixture cool. Temper the egg yolks with the warm cream.
  3. Add the fig mixture to a blender and blend until smooth. Fold the fig mixture into the cream and eggs until everything is incorporated. Pour into 8 ramekins. Cook in a water bath at 325 degrees for 25-30 minutes or until set.
  4. It will keep for a day or two in the fridge. When ready to serve, sprinkle with organic sugar, shake all over and shake off excess sugar and torch it with a hand torch until caramelized and slightly burnt and shiny. Garnish with a sprig of thyme. We also serve a vanilla shortbread thin on the side!
